Trader Joe’s Gluten Free Pizza Dough FTW

When we moved to the ‘burbs, I was so excited that there was a Trader Joe’s near us. We had one near our first apartment, but the parking lot was atrocious so we didn’t go nearly as often we’d like, even though we LOVED it. When we moved into our second apartment, there was no TJ near us, so naturally we missed it.

Having moved into our forever home and being near one, I figured I would be there every week! If you would believe it, 5 years passed and I still hadn’t stepped foot into the TJ πŸ€¦πŸ»β€β™€οΈ FINALLY, a couple of weeks ago we went and ended up buying a lot more than expected πŸ˜‚

I was really excited though, because they had the gluten free pizza dough, and to be honest, I haven’t been happy with the gluten free pizza in my neighborhood. They all use the same dough from the same supplier, so I generally end up getting a cauliflower crust pizza (which does truly taste better, even though I don’t like cauliflower)

We made a kid friendly half cheese/half pepperoni GF pizza for the boys, but for us, we made this beauty:

Arugula and Prosciutto GF Pizza with Roasted Cherry Tomatoes 🀀It was so absolutely delicious that not only was the GF crust hubby approved (!!!) but we made it again this past weekend, this time with our home grown cherry tomatoes ❀️

Ingredients

  • 1 Trader Joe’s GF pizza dough
  • .5 cup of your favorite tomato sauce
  • 1 cup mozzarella cheese (we used Trader Joe’s mozzarella the first time, and then switched it up to their 4 cheese blend the second time)
  • arugula
  • prosciutto
  • 1 cup cherry tomatoes
  • olive oil
  • salt, pepper, garlic powder

Directions

  • preheat your oven, grill, or pizza oven (we used our home oven set to about 375* with a pizza stone the first time, and our grill with the pizza oven the second time)
  • roll out the pizza dough to about 12″ to avoid overworking the dough, and pinch the edges to make an edge
  • spread about a tablespoon of olive oil around the crust and sprinkle garlic powder
  • sprinkle some cornmeal on your pizza stone or sheetpan so the pizza doesn’t stick, and let the crust cook for a few minutes
  • while the crust is cooking, roast the tomatoes in a pan with some olive oil, salt and pepper
  • after a few minutes, take the crust out and spread the tomato sauce, cheese, and tomatoes.
  • put back in the oven for 10-12 minutes until the crust is golden brown and the cheese is bubbly and caramelized
  • once the pizza is done, take out of the oven and let cool for a minute. After a minute, spread the arugula and lay the prosciutto. If it’s your preference, sprinkle some balsamic vinegar or truffle seasoning (or both!)
  • ENJOY!
